pizzettes with gorgonzola tomato and rosemary

these bite size pizzas can be topped with any of your favorite pizza toppings..

Ingredients

  • 1 ball purchased pizza dough
  • 5 ozs. Gorgonzola cheese, crumbled
  • 5 ozs. cherry tomatoes, quartered
  • 1/4 cup chopped fresh rosemary
  • 1 TBSP> extra virgin olive oil

Preparation

Step 1

Preheat oven to 475 degrees
Roll out the pizza dough into a 1/4 inch thick round. on flour
Cut out 30 circles using a 2 1/2 inch cookie cutter
Arrange the circles on parchment lined baking sheets.
Sprinkle the circles with the cheese.
Top with the tomatoes, pressing them gently into the cheese and the dough.
Sprinkle with the chopped rosemary and drizzle with the oil.
Bake until golden brown, about 10 minutes.
