Peanut Butter and Veggie Salad (ramen noodles)

Ingredients

  • 2 pkgs. ramen noodles, any flavor
  • 1/2 cup creamy peanut butter
  • 1/2 cup white vinegar
  • 1/4 cup teriyaki sauce
  • 1/2 tea. minced garlic
  • 1/4 tea. crushed red pepper flakes
  • 1 cucumber, quartered lengthwise, seeded and sliced
  • 2 carrots, shredded
  • 2 green onions, sliced

Preparation

Step 1

Bring 4 cups water to a boil. Remove seasoning packets and discard. Add blocks of noodles to boiling water and cook for 3 minutes or until tender, stirring sefv3eral times to separate noodles. Drain noodles and rinse under cold water, drain again and set aside.

In a medium bowl, combine 1/4 cup water, peanut butter, vinegar, teriyaki sauce, garlic and red pepper flakes. Whisk together until smooth. Add cold noodles, cucumber, carrots and green onions; toss gently to mix.

Serve promptly.
