Ingredients

  • 2 chicken breasts
  • pesto (homemade or from a jar) to your liking
  • 1/2 cup arborio rice
  • salt and pepper to taste
  • 2 tbsp. heavy cream

Preparation

Step 1

cook the chicken in pan with olive oil, cook until done, then let it cool and cut it up cubed size. if you want homemade pesto it consists of basil(bunch), pine nuts(1/4 cup toasted), parmesan cheese(1/4 cup), 2 cloves garlic, cup of olive oil, and salt and pepper. Boil water and cook the rice according to directions, then drain. Add chicken and pesto to rice, then add the cream; cook until well mixed. Add salt and pepper if desired. Enjoy!
