Santa Fe Soup (ramen noodles)

Ingredients

  • 1 Tbsp. olive oil
  • 6 oz. lean pork, cut into thin strips
  • 1 tomato, chopped
  • 1 (14 oz) can hominy with liquid
  • 1 (4 oz) can whole roasted chilies, drained and chopped
  • 2 (3 oz) pkgs. beef or picante beef flavor ramen noodles w/ seasoning packets
  • Tortilla chips, broken
  • Sliced green onions

Preparation

Step 1

In a large saucepan over medium-high heat, heat oil. Add pork and cook until browned, stirring often. Add 4 cups water, tomato, hominy with liquid, chilies, noodles and seasoning from both packets. Bring mixture to a boil and cook until noodles are tender, about 3 minutes.

Garnish with tortilla chips and green onions before serving.
