Remove the turkey from the refrigerator 2 hours prior to cooking.

Remove giblets and neck.

Rinse the turkey, inside and out.

Without blotting dry, place it breast up on a rack in a roasting pan. Drape with a clean dry cloth to keep the bird from drying out, while it warms up.

Put oven rack on lowest level.
Set oven to 500 degrees, 30 minutes prior to placing turkey in oven.

Remove the towel from the turkey. Do not season.

Place the turkey in the oven, cooking for 8 minutes per pound.

Do NOT open the door for the first 45 minutes. After 45 minutes, if it is smoking, pour a cup of tepid water in the pan.

Do not baste.

When the turkey is evenly browned, cover loosely with aluminum foil.

After another hour, check the internal temperature of the turkey. Inserting the thermometer in the thickest part of the thigh, it is done when it registers 165-170 degrees.

If done, remove and let sit for 10 minutes. The temperature will continue to rise another 5-10 degrees.
