Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 1 tsp salt
  • 1 heaping TBSP baking powder
  • 1/4 to 3/8 cup sugar
  • 1 egg
  • 3 TBSP melted shortening or bacon grease*
  • 1/2 cup evaporated milk
  • 1/2 cup water or skim milk

Step 1

In a 425 degree oven, heat 3 - 4 TBSP shortening and/or bacon grease. 10 ½” cast iron skillet until almost smoking.

Sift dry ingredients. Add remaining ingredients. Blend thoroughly. Pour into very hot sizzling skillet. Some of the fat should slightly cover the edges of the cornbread batter. Bake for 20 minutes at 425 degrees.
