Ingredients
- 4 T butter
- 40 peeled garlic
- 1 c dried apricots
- 6 fresh thyme sprigs
- 1 4 lb chicken
- 1/2 c unsalted chicken stock
- 1/4 dry white wine
- 1 T flour
- 1 T chopped fresh thyme
Preparation
Step 1
Line cooker with alum foil allowing 2 inches to extend over sides. Lightly grease foil with cooking spray. Pour 3 T of melted butter into cooker, with garlic and apricot. Add Rosemary and thyme sprigs. Place chicken Brett up. Brush remaining butter on bird. Add stock and wine. Cook on low for 8 hours.
