Ingredients
- 1 package linguine
- 1 1/2 cup favorite marinara sauce (homemade of course best)
- 1 (4 oz) bottle fire roasted peppers, cut into thin strips
- 1/2 cup greek nonfat yogurt
- 1 cup fresh basil, chopped
- 1 1/2 tsp hot pepper sauce
- 1 tsp salt
- 1 tsp freshly ground pepper
- 6 Tbs grated Parmesan cheese
- 1 shot vodka (old school)

Step 1
Cook pasta to directions, set aside.
In large deep skillet or pan bring marinara sauce, vodka and peppers to simmer. Cook for 5-10 minutes until sauce thickens and peppers are incorporated. Remove from heat.
In small bowl put yogurt and 1/2 cup of marinara sauce. This is to temper and prevent yogurt from curdling. Whisk rest of yogurt into sauce (still off heat). Cover to keep warm.
Put linguine in large serving bowl, add sauce, chopped basis, pepper sauce and 3 Tbs of cheese and toss. Serve in pasta bowls and sprinkle the remaining cheese over pasta.
Note on Vodka. The vodka isn't necessary, but that's the old school way of cooking this dish. It's just fine without it.
