Turkey Breast w/ Capers and Mushrooms

Ingredients

  • 8 slices turkey breast tenderloins , approx. 1 1/2 lb
  • 1/2 lb mushrooms
  • 4 Tbsp flour
  • 2-4 Tbsp olive oil
  • 1/4 cup chopped parsley
  • 4 Tbsp butter
  • 1/4 cup drained capers
  • 1/2 tsp minced garlic
  • 2 Tbsp chicken broth
  • salt and pepper to taste

Preparation

Step 1

Pound turkey steak flat. Thinly slice the mushrooms (about 3 cups). Coat turkey with flour, salt, and pepper. Shake off excess flour and seasonings. Heat oil and brown(golden) the turkey, about 2-3 minutes on 1st side, 2 minutes on other side. Transfer slices to a warm dish. Heat 2 tbsp butter and cook mushrooms(shaking skillet and stirring) about 4 minutes. Add capers and garlic and toss to blend. Add broth and let cook 30 seconds. Swirl in remaining butter. Spoon mixture over turkey and sprinkle with parsley.
