Summer Salad with BBQ Chicken and Citrus Vinaigrette

  • Salad:
  • 1 piece of boneless, skinless chicken breast per person
  • 1 Tbs olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 Cups romaine lettuce
  • 2 large oranges, peeled and sectioned
  • 1/2 cup sliced fresh strawberries
  • 1/4 cup chopped walnuts (candied are good too)
  • Vinaigrette:
  • 1 cup orange juice
  • 3 Tbs red wine vinegar
  • 3 Tbs honey
  • 2 Tbs Dijon mustard
  • 1 Tbs olive oil
  • dash of salt and pepper



Step 1

In small bowl whisk all vinaigrette ingredients. Refrigerate until chicken is done.

Coat chicken with olive oil, dust each side with salt and pepper and grill until chicken is done. Right before chicken is done coat both sides with favorite BBQ sauce. Cover with aluminum foil and wait 10 minutes before slicing.

Toss romaine lettuce, oranges and strawberries.

When ready to serve put salad mixture in bowls, sprinkle walnuts over, slice chicken into strips and put over salad. Top with dressing.
