Potato Galette

Easy and yummy-- my favorite combination!
This is a microwave version of the classic dish. I am considering adding chopped red onion to the recipe.

Ingredients
- 4 medium-size potatoes, about 1-1/2 pounds, thinly sliced
- 3 Tablespoons olive or vegetable oil
- 1/2 teaspoon salt
- 3 cloves garlic, finely chopped
- 2 Tablespoons grated Parmesan cheese
- 2 Tablespoons chopped fresh parsley
Preparation
Step 1
Arrange potato slices, overlapping, in circles in pie plate, 10 x 1-1/2 inces. Mix oil, salt and garlic; spoon evenly over potatoes.
Cover tightly with plastic wrap, and microwave on high for 9-12 minutes, rotating pie plate half a turn after 5 minutes, until potatoes are tender.
Let stand, covered, for 3 minutes. Sprinkle with cheese and parsley.
Remove from pie plate and garnish with thin tomato wedges, if desired.
