Multi-Grain Granola French Toast

Ingredients

  • 1 cup egg substitute
  • 1/4 tsp. cinnamon
  • 1/2 tsp. vanilla extract
  • 1 Tbsp. sugar
  • 1/2 cup low-fat milk
  • 1 loaf Multi Grain Loaf cut into 1/2" slices
  • 1 cup granola, coarsely crushed
  • 1 1/2 cups Whole Blueberries
  • YOGURT SAUCE
  • 1 6 oz. container low-fat plain yogurt
  • 1 Tbsp. honey
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. ground cinnamon

Preparation

Step 1

1. Preheat oven to 350 F.
2. Beat together egg substitute, milk, sugar, vanilla and cinnamon.
3. Place the slices of bread into a lightly oiled 9" x 9" glass baking sheet and pour half of the egg mixture over bread.
4. Turn each slice and top with remaining egg mixture.
5. Sprinkle with granola and bake for 20 to 25 minutes.
6. Mix ingredients for yogurt sauce.
7. Top French toast with yogurt sauce and thawed blueberries.
