Salba Pomegranate Salad Dressing

Salba is a nutrient packed whole food that's high in omega 3 fatty acids and fiber. It also boasts an exceptionally high ORAC (Oxygen Radical Absorbance Capacity) value: 2 tbsp. of salba in this recipe contain 840 ORAC units. As well, pomegranate is itself a powerful antioxidant with an exceptionally high bioflavonoid count.
Ingredients
- 2 tbsp. salba
- 1/2 c. pomegranate seeds
- 1 tbsp. apple cider vinegar
- 1 tsp. lemon zest
- 3 tbsp. flaxseed oil
- 1 tbsp. agave nectar
- 1 pinch sea salt

Step 1
Mix all ingredients in a food processor, except for the salba and pomegranate seeds. once a consistent texture is reached, add the salba and pomegranate seeds and "pulse" a couple of times until the seeds are broken down, but not completely blended into the mix.
To further boost the antioxidant value, use blueberry cider vinegar instead of apple cider vinegar.
