Ingredients
- 3 medium cloves of garlic
- 3 cups drained Cannellini or Great Northern beans (about 2 15 oz cans)
- 1/2 c Tahini
- 6 tbl Extra Virgin Olive Oil
- 1/4 c fresh lemon juice
- 1 tbl soy sauce
- 3/4 tsp salt
- 1 1/2 tsp ground cumin
- 1/8 tsp ground coriander
- 1/2 tsp cayenne pepper
- 1/4 to 1/2 c cold water, if necessary
- Pita Chips

Step 1
Ina food processor, process teh garlic cloves until finely minced. Add the beans and pulse until coarsely chopped. Then, with the machine running, pour ont eh tahini, olive oil, 1/4 c lemon juice, and soy sauce through the feed tube. Process until smooth, stopping occasionally to scrap down the sides of the bowl. Add the salt, cumin, coriander, and cayenne, re-process utnil thoroughly blended.
If the puree is too thick for taste, add water and re-process. Serve cold with pita chips.
