Ingredients

  • 3

    medium cloves of garlic

  • 3

    cups drained Cannellini or Great Northern beans (about 2 15 oz cans)

  • 1/2

    c Tahini

  • 6

    tbl Extra Virgin Olive Oil

  • 1/4

    c fresh lemon juice

  • 1

    tbl soy sauce

  • 3/4

    tsp salt

  • 1 1/2

    tsp ground cumin

  • 1/8

    tsp ground coriander

  • 1/2

    tsp cayenne pepper

  • 1/4 to 1/2

    c cold water, if necessary

  • Pita Chips

Directions

Ina food processor, process teh garlic cloves until finely minced. Add the beans and pulse until coarsely chopped. Then, with the machine running, pour ont eh tahini, olive oil, 1/4 c lemon juice, and soy sauce through the feed tube. Process until smooth, stopping occasionally to scrap down the sides of the bowl. Add the salt, cumin, coriander, and cayenne, re-process utnil thoroughly blended. If the puree is too thick for taste, add water and re-process. Serve cold with pita chips.
