Quiche - Veggie

Ingredients

  • 1 lg onion, chpd
  • 1 c. slice mushrooms
  • 4 green onions, chpd
  • 1 c. broccoli florets
  • 1/2 c. zucchini, slice
  • 1/2 c. grape tomatoes
  • small bunch asparagus, chpd
  • salt, pepper and olive oil
  • 5 whole eggs
  • 1 1/2 c. milk
  • 1 c. gruyere, grated
  • 1/2 c. parmesan, grated
  • Deep dish pie crust

Preparation

Step 1

Roast all veggies with olive oil, salt and pepper.

Par bake pie crust at 375. Put gruyere in bottom of crust. Beat together eggs and milk. Place veggies in crust and gently pour in egg/milk mixture, top with parmesan. Bake for 40-50 minutes until knife inserted in center comes out clean. Cook on wire rack for 10 minutes so quiche has time to set.
