Ingredients

  • 2

    T olive oil

  • 1

    med onion, chpd

  • 2

    cloves garlic, minced

  • 2

    slices bacon, chpd

  • 2

    stalks celery, chpd

  • 2

    green peppers, chpd

  • 1

    lb ground turkey

  • 1

    bay leaf

  • 1

    tsp cumin

  • 2

    T. oregano

  • 1

    T. salt

  • 2

    tsp black pepper

  • 6

    oz tomato paste

  • c. chili powder (mixed with some warm water)

  • Chipotle peppers in adobo sauce (1-3 peppers to your taste, chpd - 3 is HOT!)

    - 4 oz cans green chiles

  • 3

    - 28 oz cans whole tomatoes, crush with your hands

    - 15 oz can kidney beans, drained

  • 1

    - 15 oz can garbanzo beans, drained

  • 1

    - 15 oz can black beans, drained

  • 1 - 15

    oz corn, drained

  • Garnishes:

  • sour cream

  • jalapenos

  • shredded cheese

  • chpd green onions

Directions

Saute onion, garlic, bacon, celery and peppers in the olive oil for 5 minutes. Add ground turkey, tomato paste and all spices, except the chili powder, stir well and simmer until turkey is cooked. Add the chili powder and all the rest of the canned ingredients, EXCEPT CORN, and simmer, covered for 45 minutes. Stir in corn and simmer, uncovered for another 5-10 minutes.
