This wonderful spread makes a perfect Caesar dressing, a lovely sauce for seafood in place of Hollandaise and goes great with a burger.

also omit saffron and add terregon for a bernaise style sauce

for fish, chicken etc

Ingredients

  • Ingredients:
  • 1 large clove garlic, chopped
  • 12 ounces soft (Japanese) Tofu
  • 3/4 cup olive oil
  • 1/3 cup fresh lemon juice
  • 2 Tablespoons Dijon mustard
  • 1/4 cup white onion, finely chopped
  • 2 teaspoons lemon zest
  • Salt and cayenne to taste
  • 12 threads saffforn soaked in tbsp hot water

Step 1

Method:
•Place everything but the oil in a blender.
•Process until smooth then remove the blender top and slowly stream in the olive oil.
Makes 3 cups. Serving size is 1 ounce (2 Tablespoons)

for Bernaise substitute saffron with terragon soaaked in hot water
