Ingredients
- To garnish:
- 2 seeded, soaked ancho chiles
- 1 onion
- 2 tomatoes
- 2 garlic cloves
- 6 cups chicken broth
- 4 torn corn tortillas
- shredded cooked chicken
- 1/2 cup cilantro
- salt
- crisp tortilla strips
- Mexican cheese
- avocado
- cilantro
- lime juice.
Preparation
Step 1
Puree ancho chiles, onion, tomatoes and garlic cloves; fry in oil. Add chicken broth, corn tortillas, some shredded cooked chicken and cilantro; simmer until thick. Add salt; garnish with crisp tortilla strips, Mexican cheese, avocado, cilantro and lime juice.
