Ingredients
- 1 envelop (2 tsp) active dry yeast
- 1 tsp granulated sugar
- 1 1/4 cups warm water (105f-115f)
- 5 cups all purpose or bread flour
- 2 large eggs
- 2 tsp salt

Step 1
Stir yeast and sugar into water. Let stand about 10 minutes until foamy. In food processor: put flour, eggs and salt in work bowl fitted with metal blade. Turn processor on and pour yeast mixture through feed tube in a steady stream. Process until dough cleans sides of bowl, then process 45 seconds longer (this takes the place of kneading) or until dough is smooth and elastic. By hand or with electric mixer: Put yeast mixture and eggs in a large bowl. Add flour and salt and stir or beat until dough bulls away from sides of bowl. turn dough out on a lightly floured surface and knead 5 minutes or until smooth and elastic. Put dough into a large oiled bowl and turn dough to oil top. cover bowl with plastic wrap. Let dough rise in a warm, draft-free place 1 hour or until doubled. Punch down dough and divide into 4 equal pieces. Sahpe pieces into smooth balls. Dough Can be made ahead up to this point and refrigerated or frozen. Cover lightly wiht plastic crap. Let rest 30 minutes so dough wiht be heasier to handle. Dough will rise but not double in volume. For each pizza: brush a 12-inch round pizza pan or a large cookie sheet with 1 tsp olive oil or spray with olive oil cooking spray. Place dough on lightly floured surface. With floured hands pat into 6" round. Stretch or roll out dough wiht a rolling pin into and 11" circle. Life onto prepared pan and press dough wiht knuckles or fingers out to edges of pizza pan or into a 12" circle on cookie sheet. Add toppings and bake on lowest rack. cut wedges wiht pizza wheele or knife.
