Ingredients
- Also Needed:
- 1 (5 1/4 oz.) pkg. Melba Toast
- 1 Large Egg
- 1 Egg white
- 1 Tbsp. Brown mustard
- 1 tsp. paprika
- 1/2 tsp. dried thyme
- 1/2 tsp. dried sage
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 (3 1/2 lb.) chicken, cut into 8 pieces and skinned
- Wax Paper
- Aluminum Foil
- Olive oil non-stick spray
Preparation
Step 1
1. Preheat oven to 400 degrees F. Line baking pan with foil, place a rack in pan.
2. Put Melba toast in a food processor (or blender) until coarsely crushed (1 1/3 c. crumbs). Spread crumbs on wax paper. In a bowl, combine egg, egg white, brown mustard, paprika, thyme, sage, salt and pepper, beating with a whisk until blended.
3. Dip each piece of chicken in egg mixture, then coat with crumbs. Place chicken, bone side down, on the rack; sprinkle with any remaining crumbs. Spray each piece of chicken lightly with Olive oil non-stick spray. Bake until chicken is browned and cooked through, about 40-45 minutes.
