Ingredients
- 1 cup oil
- 4 eggs, beaten
- 1 16oz. can pumpkin
- 3 cups sugar
- 3 1/2 cups flour
- 2 tsp. soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 cup pecans or walnuts (optional)
Preparation
Step 1
Mix oil, sugar, eggs and pumpkin together. Combine dry ingredients and mix with other mixture. Grease and flour three 1 lb. coffee cans and one 16oz. pumpkin can. Pour each 1/2 full (or you may substitute two 9x5x3" loaf pans). Bake 300 degrees about 1 hour and 20 minutes. Cool for 10 minutes and remove from cans. Cool for 1 hour before slicing. Great for gifts!
