Chicken Piccata

Ingredients

  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup all-purpose flour
  • 1/2 cup (1 stick) butter, softened, divided
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons lemon juice1 tablespoon capers

Directions

1Place the chicken breasts between two sheets of waxed paper. Pound the chicken to a 1/4-inch thickness. Season with the salt and pepper.
.2Place the flour in a large shallow bowl. Coat the chicken breasts with the flour.
.3Melt 2 tbsp. butter in a large skillet over medium-high heat. Cook the chicken until cooked through and golden brown on each side, 6–8 minutes.
.4Transfer the chicken to a serving platter. Cover to keep warm. Add the remaining butter, parsley, lemon juice and capers to the skillet. Immediately remove from heat. Stir until the butter is melted. Pour the sauce over the chicken. Serve immediately.
