Roasted Red Beets
I roasted these and let them cool. Tasted a few bites at room temp. Not bad! Always thought I disliked red beets, but I think these will taste ok sliced up and added to a salad.
- Red beets
Cut off green tops. Scrub with vegetable brush. Put in roasting pan and add 1/2" water, cover and roast in 350 oven. Remove cover and roast for another 15 minutes. Remove from oven (I drained the water) and let cool to room temp, peel them, then slice and serve. Be careful when peeling, red beets stain everything! They are pretty easy to peel...should slip off between fingers.
