Ingredients
- 3/4 cup butter (12 TBS)
- 1/3 cup packed brown sugar
- 1/3 cup granulated sugar
- 1 egg yolk
- 1/2 cup molasses
- 2 1/4 cup flour
- 1 tsp soda
- 1/4 tsp salt
- 1/2 tsp cloves
- 1 1/2 tsp cinnamon
- 1 1/2 tsp ginger
- 1/4 tsp allspice
- 1/4 tsp finely ground pepper
- 1 tsp vanilla
Preparation
Step 1
Mix dry ingredients
Cream butter and both sugars with paddle attachment until light and fluffy. Reduce speed to medium and add egg yolk and vanilla. Add molasses and beat until incorporated. On lowest speed, add flour and mix just until incorporated.
Scoop heaping tablespoons of dough and roll between palms into 1/1/2 inch ball. Roll in granulated sugar. Place on cookie sheet, about 2” apart.
Bake one sheet at a time until cookies are browned, puffy and edges are just set. (About 11 minutes) at 375°. Do not overbake.
Cool cookies on sheets for 5 minutes then transfer to wire rack.
