Coconut Sweet Potatoes with Pecans

Ingredients

  • 2 pounds sweet potatoes, peeled and shredded (8 cups)
  • 2 tablespoons brown sugar
  • 2 tablespoons butter or margarine, melted
  • 2 tablespoons water
  • 1/4 cup flaked coconut
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup broken pecans, toasted
  • Toasted coconut (optional)

Preparation

Step 1

In a 3 1/2- to 4-quart slow cooker combine sweet potatoes, brown sugar, melted butter, water, coconut, and cinnamon.
Cover; cook on low-heat setting for 3 to 4 hours or on high-heat setting for 1 1/2 to 2 hours. Stir in pecans. Sprinkle with toasted coconut, if desired.
