Ingredients
- 2 oz anchovy fillets
- 1 egg yolk
- 1 tsp finely chopped fresh flat leaf parsley
- 1 Tbl finely chopped garlic
- 1 cup extra virgin olive oil
- 1/4 cup grated parm cheese
- 1/4 cup red wine vinegar
- 1 head romaine lettuce, cut, washed and drained
Preparation
Step 1
In a stainless steel bowl crush anchovies with a fork until mashed. Add yolk stir with a wish 2 to 3 min. Stir in parsley and garlic. Slowly add olive oil in steady stream. Whisk. Add the vinegar and 2 Tbl of parm cheese and stir briskly with a wisk. In a large bowl toss lettuce with remaining cheese.
