  • 1 1/2 cups sugar, divided
  • 4 whole eggs
  • 3 egg yolks
  • 3 cups half and half
  • 1 tablespoon vanilla extract

Step 1

Preheat oven to 350 degrees. In a skillet over low heat, melt 1 cup sugar until it begins to turn light brown (make sure it doesn't get too dark). Spoon caramelized sugar into 8 custard cups or ramekins.

Beat whole eggs and egg yolks until well mixed. Stir in remaining 1/2 cup sugar, vanilla and half and half. (You don't want too many bubbles in the mixture). Strain mixture through a fine sieve.

Spoon custard into prepared ramekins. Place filled cups in a large baking dish, and add enough hot water to baking dish so that it comes about an inch up the sides of cups. Bake until a knife inserted in center of custard comes out clean, 40 - 45 minutes. Cover and chill overnight.

To serve, run a sharp knife around flan to loosen, and invert onto a serving plate. Gently shake cup if flan does not come out easily.
