Ingredients
- 1/2 a small onion
- 8 fl oz milk
- 1 lb grated Gouda cheese
- 2 tsp caraway seeds
- 3 tsp cornflour
- 3 tbsp gin
- pepper
- light rye bread and button mushrooms, to serve
Preparation
Step 1
Rub the inside of the fondue pot with the cut side of the onion. Add the milk and heat until bubling, then gradually stir in the cheese. Continue to heat until the cheese melts, stirring frequently. Stir in caraway seeds. In a small bowl, blend cornflour smoothly with gin, then stir into the cheese mixture and cook for a couple of minutes until smooth and creamy. Serve with cubes of bread and button mushrooms, to dip.
