Ingredients
- Dressing:
- 1/3 cup light olive oil
- 1/4 cup red wine vinegar
- 1/3 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 2 cloves garlic finely chopped
- 1-1/2 teaspoons ground cumin
- 1-1/2 teaspoons chili powder
- 1/2 teaspoon ground pepper
- 1-1/4 teaspoon salt
- Salad:
- 1 lb. ground turkey cooked and drained
- 2 large ripe tomatoes diced
- 1/2 cup chopped red onion
- 1 can (15 oz.) black beans rinsed and drained
- 1 can (15 oz.) chickpeas rinsed and drained
- 1 can shoepeg white corm ( 8 oz.) drained
- 2 cups monterey jack cheese
- 6 cup taco chips
- 4 cups shredded romaine or iceberg lettuce
Preparation
Step 1
Dressing:
Whisk dressing ingredients in small bowl.
Salad:
Combine turkey or chicken, tomatoes, onion, beans, chickpeas, corn, 1-1/2 cups cheese in bowl. Add dressing. Place chips on plates. Scatter lettuce on top. Spoon on turkey. Sprinkle with remaining cheese.
