    ears shucked corn

  • cooking spray

  • 2

    T chopped bottled roasted red bell pepper

  • T mayonnaise

  • ½

    t minced garlic

  • ½

    t fresh lemon juice

  • t smoked paprika

  • t salt

  • dash of ground red pepper

  • 4

    t chopped fresh basil


Preheat grill to high heat. Place on the rack that you have coated with cooking spray. Grill 8 min or until lightly charred turning occasionally. Combine roasted bell pepper, mayo, garlic, lemon juice, paprika, salt and ground red pepper in a mini food processor and process until smooth. Drizzle over corn and sprinkle with basil.
