Corn on the Cob with red pepper and mayo

  • 4 ears shucked corn
  • cooking spray
  • 2 T chopped bottled roasted red bell pepper
  • 1 1/2 T mayonnaise
  • 1/2 t minced garlic
  • 1/2 t fresh lemon juice
  • 1/8 t smoked paprika
  • 1/8 t salt
  • dash of ground red pepper
  • 4 t chopped fresh basil

Step 1

Preheat grill to high heat. Place on the rack that you have coated with cooking spray. Grill 8 min or until lightly charred turning occasionally.

Combine roasted bell pepper, mayo, garlic, lemon juice, paprika, salt and ground red pepper in a mini food processor and process until smooth.
Drizzle over corn and sprinkle with basil.
