Foolproof Oven-baked Brown Rice

Ingredients

  • 1 1/2 cups brown rice (long, short or medium grain)
  • 2 1/3 cups water or broth
  • 1/2 tsp salt
  • 2 tsps unsalted butter

Preparation

Step 1

Heat oven to 375 degrees. Adjust rack to middle of oven.
Spread rice in 8X8 inch baking dish.
Bring water (broth) and butter to boil, covered, in a medium saucepan over high heat. Once boiling, immediately stir in salt and and pour over rice.
Cover dish with foil and bake for one hour.
Fluff rice with fork, then cover with kitchen towel for 5 minutes.
Uncover and let rice stand for an additional 5 minutes.

Variation: Brown rice with parmesan, lemon and herbs
Chop one small onion finely. Melt butter in a saucepan and saute onion until translucent about 3 minutes.
Omit butter from the original recipe. Stir onion into rice after adding broth to rice.
After removing foil from cooked rice, add 1/8 tsp pepper, 1/4 c minced parsley, 1/4 c chopped basil, 1/2 cup grated Parmesan, 1 tsp grated lemon zest, and 1/2 tsp lemon juice. Cover with kitchen towel and continue with recipe.
