Chicken Artichoke Casserole

Ingredients

  • 1 3lb cut up chicken pieces (I use boneless skinless )
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 6 T butter
  • 1/4 lb mushrooms cut into pieces
  • 4 T flour
  • 1 1/3 cup chicken consomme
  • 6 T sherry
  • 1 12-15 oz can drained artichoke hearts

Preparation

Step 1

Salt, pepper and paprika the chicken pieces. Brown them in 4 T of butter and place them in casserole dish. Now put the other 2 T of butter in the frying pan and saute the mushrooms in it for 5 minutes. Sprinkle the flour over them and stir in the chicken consomme and the sherry. While this cooks 5 minutes, place the artichoke hearts in the casserole dish. Pour the mushroom, sherry mixture sauce over them and cover and bake at 375 for 40 minutes. You can prepare this the day ahead, bring to room temperature before baking.
