Halibut with lemon caper sauce

Ingredients
- 4 tsp canola oil
- 4 5oz halibut fillets (can use cod)
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cloves minced garlic
- 1/3 c dry white wine
- 2 t low sodium chicken broth
- 4 tsp lemon juice
- 1 t capers
- 1 t cold unsalted butter
- 1 t chopped parsley

Step 1
1) warm 3t oil in skillet over md-high heat, season fish with salt and pepper, add to skillet and cook til golden, 3-4 minutes. carefully turn and cook 2-3 minutes more til cooked through. transfer to platter and tent with foil.
2) add remaining tsp oil and garlic to skillet, sauté for 20 seconds. add wine and cook to release brown bits and til liquid reduced by half, 1-2 minutes. add broth and cook 1 minute. stir in lemon juice and capers. remove from heat; add butter and parsley and swirl til sauce is creamy. spoon over fish and serve
