Sushi Salad

Ingredients

  • 2 cups cooked sushi rice
  • 1 avocado,cubed
  • 1 purple onion or scallions
  • 1 mango,cubed
  • 1 cucumber,thinly sliced
  • (cut up lettuce)
  • imitation crab meat
  • tempura crunch for the top
  • bottled sesame-ginger salad dressing
  • OR 2 1/2 tbs rice vinegar
  • 2 1/2 Tbs red wine vinegar
  • 1/3 cup plus 1 Tbs sugar
  • 1 Tbs salt
  • 5 Tbs oil

Preparation

Step 1

Cook rice. sprinkle tempura crunch on top of salad before serving.
