Fruit and Oat Muesli

Makes 6 servings, served at Canyon Ranch Spa in Miami Beach. Can be made 8 hours ahead, cover and chill.

Ingredients

  • 1 1/4 cups quick cooking oats
  • 2/3 cup reduced fat (2%) milk
  • 2/3 cup plain low fat yogurt
  • 1 teaspoon vanilla extract
  • 2/3 cup fresh orange juice
  • 1/4 cup honey
  • 1 1/2 cups grated peeled red-skinned apples
  • 1 cup chopped raw almonds
  • 3 cups chopped fresh frui (apples, pears, peeled oranges)

Preparation

Step 1

Mix first 4 ingredients in large bowl. Let stand 5 minutes to soften oats. Whisk orange juice and honey in medium bowl. Stir in apples and almonds, then 3 cups of chopped fruit. Stir fruit mixture into oat mixture.
