Ingredients
- 1/4 lb. baby arugula
- 5 fresh figs, quartered
- kosher salt and pepper
- 1/4 lb. thinly sliced ham
- 1/2 c pecans, toasted
- 2 green onions, thinly sliced
- 4- 1/2 " thick slices country bread, grilled
- 1/2 c ricotta cheese
- Molasses Mustard Dressing
- 3 T molasses
- 2 T water
- 1-1/2 T red wine vinegar
- 1-1/2 T Dijon mustard
- 1 t honey
- 1/2 t kosher salt
- 1/4 t pepper
- 1/2 c canola oil
Preparation
Step 1
Make dressing by whisking together all ingredients except oil, then slowly whisk in oil until completely blended.
Put arugula and figs in bowl. Add half the dressing, season with salt and pepper and toss gently.
Divide greens and figs onto 4 small plates. Place a slice or two of ham on each plate. Drizzle with dressing and garnish with pecans and green onions. Top bread with ricotta cheese and serve with salad.
