Shrimp Scampi with White Wine

Ingredients
- 1 1⁄2 pounds large shrimp, peeled and deveined with tails left on
- 2 tablespoons butter or margarine
- 1 ⁄4 cup minced parsley
- 1 teaspoon dried basil leaves
- 3 cloves garlic, minced
- 1 ⁄4 cup dry white wine
- 1 tablespoon lemon juice
- 1 teaspoon grated lemon rind
- 1 ⁄4 teaspoon salt
- 1 ⁄8 teaspoon black pepper

Preparation
Step 1
1. Rinse scampi and pat dry. In a large nonstick skillet, melt the butter over moderate heat. Add the parsley, basil, and garlic and cook for 1 minute.
2. Stir in the scampi, wine, lemon juice, lemon rind, salt, and pepper. Cook, covered, for 4 to 5 minutes or just until the scampi turn opaque, stirring occasionally. Serve with lemon wedges.
