Ingredients
- 1 1/4 cups flour
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 2 eggs
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 tsp vanilla
- 1 apples (about a pound) peeled and shredded
- 1 1/2 cup caramel candies
- 1 TBS cream
Preparation
Step 1
Preheat oven to 350 degrees.
In a bowl whisk together the flour, baking powder, cinnamon and salt. In another bowl whisk together eggs, brown sugar and augar until smooth. whisk in oil and vanilla. Mix into flour mixture until just combined, stir in apples. Spoon batter into cupcake wrappers until almost filled. Bake until golden, and a toothpick comes out dry, 20 - 30 minutes. Transfer to a rack.
In a bowl, combine caramels and cream, microwave for 1 minute, stri, then reapeat in 30 sewcond intervals ntil melted and smooth.
After cupcakes are cool, frost.
