Marinated Lamb Popsicles with Fenugreek Cream Curry

Ingredients

  • Lamb
  • 1/4 c sweet white wine
  • 3/4 c grainy yellow mustard
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 4 #, french cut racks of lamb, in chops
  • Curry Sauce
  • 4 c whipping cream
  • 1 T salt
  • 1 tsp paprika
  • 1 T dried green fenugreek leaves
  • 1/4 c lemon juice
  • 3-4 T canola oil
  • 1 tsp tumeric

Preparation

Step 1

Marinate the Lamb
1. Combine wine, mustard, salt and pepper in large bowl.
2. Add lamb and coat well with marinade.
3. Cover with plastic wrap and refrigerate fro 2-4 hrs.

Make the Sauce
1. In a large bowl, combine cream, salt, paprika, cayenne, fenugreek leaves and lemon juice.
2. Heat 3-4 T of oil and add tumeric. Cook for 1 minute.
3. Stir in cream mixture and cook on low to medium heat for about 5 minutes or until is gently boiling.

Cook the Lamb
1. Heat BBQ or stove top cast iron pan on high heat.
2. Place lamb on grill and cook for 2-3 minutes each side.
3. Place 3-4 lamb popsicles on each plate.
4. Pour curry over the meat.
5. Serve rest on side as a dipping sauce.
