Graham Cracker Custard Pie

Olde Fashioned Egg Custard Pie w/ Graham Cracker Crust

Ingredients

  • Crust:
  • 1 Pkg (9 doubles) graham Crackers, crushed
  • 1/2 cup sugar
  • 2 Tbls butter, room temperature
  • 1 tsp cinnamon
  • Filling:
  • 3 eggs, seperated
  • 2 cups milk
  • 1/2 cup sugar, plus 3 Tbls for meringue
  • 2 Tbls cornstarch
  • 2 Tbls butter
  • 1 tsp vanilla extract

Preparation

Step 1

Pie Crust Shell:
Cream butter, sugar and cinnamon. Add Graham cracker crumbs and mix well. Press 2/3 of mixture into bottom of lightly greased 8 or 9 in. pie plate (reserve the remaining 1/3 for top of pie).

Filling:
Seperate eggs (reserve whites). Combine egg yolks, milk sugar, cornstarch and butter - cook in double boiler until slightly thickened and the consistency of pudding. Remove from heat and add vanilla extract. Pour custard into crust.

Meringue:
Beat egg whites until stiff, adding 3 Tbls sugar gradually. Spread meringue on top of custard and sprinkle with the reserved graham cracker crumbs.

Bake at 350 degrees for 30 minutes. Allow pie to cool before cutting.
