Mardi Gras Jambalaya

Ingredients

  • 1/3 cup celery, chopped
  • 1/4 cup yellow onion, chopped
  • 1/4 cup green bell pepper, chopped
  • 2 tb butter or oil
  • 1-14 1/2 oz can diced tomatoes
  • 1 1/2 cups chicken broth
  • 2/3 cup long grain rice (no more than that)
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • hot pepper sauce
  • 1 bay leaf
  • 2 cups sliced link sausage, cooked (Polska Keibasa or Hot Links)

Preparation

Step 1

In large skillet cook veggies in butter or oil until they are tender. Stir in tomatoes, chicken broth, rice, basil, garlic powder, bay leaf, and 4-5 splashes of hot sauce. Bring to boil. Reduce heat, cover, and simmer for 20 minutes until rice is tender. Stir in sausage and heat thoroughly. Discard bay leaf before serving.
