Coca-Cola Cake

This cake is moist, dense, and insanely chocolatey. In my opinion, the best chocolate cake ever.

Ingredients

  • for the cake:
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 cup (2 sticks) unsalted butter
  • 1/4 cup unsweetened cocoa
  • 1 cup Coca Cola (though I'm pretty sure my grandma used RC Cola)
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 tsp pure vanilla extract
  • for the frosting:
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup Coca Cola
  • 1/4 cup unsweetened cocoa powder
  • 4 cups powdered sugar

Preparation

Step 1

Preheat oven to 350 degrees F. Spray 9x13" pan with cooking spray and set aside.

In large bowl, combine flour, sugar, salt, baking soda, and cinnamon and whisk well to combine. Set aside.

In saucepan over medium heat, combine butter, cocoa powder, Coca Cola and buttermilk and heat until butter is melted and it starts to boil. Remove from heat and add to dry ingredients. Mix with wooden spoon until combined. Add eggs and vanilla extract and stir to combine.

Pour into prepared pan and bake 30 minutes. Do not overbake!

When cake is almost done, make the frosting. In saucepan over medium heat, combine butter, Coca Cola, and cocoa powder. Heat until it boils then remove from heat and combine with powdered sugar, whisking well until smooth.

Pour over hot cake and let sit until it is set. Enjoy!
