Bacon-Scallion Cheeseball

Ingredients

  • 1 slice bacon
  • 8 ounces of goat cheese, crumbled ((2 cups)
  • 8 ounces of 1/3 less fat cream cheese, softened
  • 3 TBS minced fresh parsley
  • 3 TBS minced fresh cilantro or dill
  • 1 garlic clove, minced
  • 1 tsp lemon juice
  • 1/2 tsp onion powder
  • 1/8 tsp salt
  • pinch of sugar
  • 4 scallions, sliced thin

Preparation

Step 1

1. Cook bacon in 10 inch non-stick skillet over medium-high heat until crisp, about 5 minutes. Transfer to paper towel-lined plate, let cool slightly, then crumble.

2. Process goat cheese, cream cheese, parsley, cilantro, bacon, garlic, lemon juice, onion powder, salt, and sugar together in food processor until smooth, about 20 seconds. Transfer cheese mixture to center of large sheet of plastic wrap. Holding 4 corners of plastic in one hand, twist cheese with other hand to seal plastic and shape cheese into a rough ball. Place in small bowl and refrigerate until firm, about 4 hours.

3. Once cheese ball is firm, reshape as necessary to form smooth ball. Unwrap and roll in scallions to coat. Let sit at room temperature for 15 minutes. Serve.
