Ingredients

  • 1 cup sugar
  • 3/4 cup salad oil
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup packed, grated carrots
  • 2 eggs, mixed in one at a time
  • 1/2 cup chopped walnuts or pecans

Step 1

Heat oven to 370 degrees. In large bowl, combine all ingredients in order given, folding in nuts last. Transfer to loaf pan and bake for 55 minutes. If using mini-loaf pans (makes 3), bake for 37 - 40 minutes.
