Ingredients
- 3/4 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 cup (or more) very rips mashed bananas - I use three bananas
- 1 3/4 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Walnuts or pecans

Preparation
Step 1
Heat oven to 325 degrees. Combine sugar, oil and eggs; beat until frothy. Add bananas and blend. Add dry ingredients. Fold in nuts, if desired. Pour into greased loaf pan or into 3 mini-loaf pans. Bake for 1 hour for single loaf or 40 minutes for mini loaves.
