Beef Taco Pie

Ingredients
- 1-14 oz can diced tomatoes
- 6-6 " flour tortilla
- 12 oz. ground beef
- 1 small onion, chopped
- 1 red or green sweet pepper, chopped
- 1 t chili powder
- 1/4 t ground cinnamon
- 4 oz. cheddar cheese, shredded

Step 1
Preheat oven to 400. Brush a 9" pie plate with olive oil. Spread large spoonful of tomatoes on the bottom of the pie plate. Arrange 4 tortillas on top of tomatoes and up the sides of the plate, overlapping as necessary. Set aside.
In large skillet cook beef, onion and sweet pepper over med-high heat until browned; drain fat. Add chili powder and cinnamon, cook and stir for 1 min. Stir in about half remaining tomatoes. Bring to boil, reduce heat. Cook uncovered, 2 mins. Spoon over tortillas. Cut remaining tortillas into large strips. Layer them and cheese over beef mixture. Top with remaining tomatoes.
Bake uncovered, 20-25 mins or until tortillas are lightly browned. Let stand 5 mins. Cut into wedges to serve. Top with cilantro if desired.
