NOTE: Two tricks to great popovers. First is to use whole milk and second to only hand whisk batter, do not use electirc mixer as can overbeat batter and it will then not rise.
Preheat oven to 375 degrees. Beat 8 eggs in deep bowl and then beat in 2 2/3 c whole milk until well blended. In another bowl combine 2 2/3 c flou and 1 tsp salt. Using a fork or pastry blender stir in 1 stick (1/4 lb) melted butter into the flour. Then gradually add the flour and butter mixture to the eggs. Blending well with a whisk. Thoroughly butter six custard cups or popover cups. Fill each with 1/2 to 2/3 c batter, place directly on the over rack and bake until golden, about 55 minutes to one hour. Remove from oven and let stand 5 minutes before serving. Can also fill these with all kinds of things. Sweet for a dessert such as chocolate, whipped cream, fruit. Can fill with eggs and sausage for a breakfast.
