pork tenderloin with tangerine-apple chutney

Ingredients

  • 1 lb pork tenderloin, trimmed
  • 2 tbl stone-ground mustard
  • 2 tbl olive oil
  • 1/2 cup finely chopped onion
  • 1 garlic clove,v finely chopped
  • 1/2 jalapeno, seeded and finely chopped
  • 1 tbl brown sugar
  • 1/2 tsp ginger, peeled and grated
  • 3 florida tangerines, peeled, sectioned and chopped
  • 1 granny smith apple, peeled, cored and chopped
  • 3 tbl cider vinegar
  • 1 tsp finely chopped fresh sage

Step 1

preheat grill to med-high. coat pork with mustard, and season with salt and pepper to taste. place pork on grill. grill 15-25 min or until thermometer reads 155. remove from grill and let rest.
meanwhile, for the chutney: in a lg saute pan heat oil over med heat. add onion, cook and stir 5 min. add garlic, jalapeno, brown sugar and ginger; cook and stir 5 min more. add tangerines, apple, vinegar and sage; simmer 15-20 min or until apple is softened. season with salt and pepper to taste.
thinly slice the pork and serve with the chutney
