Roasting Brussel Sprouts under the broiler is my secret weapon to convert my friends and family to brussel sprout lovers. I work from the same basic recipe (see below) every time and then add a few other ingredients or twists after the roasting. Everyone exclaims over the roasted brussel sprouts, usually with a full mouth.
No need to roast brussel sprouts for 30 minutes in the oven when you can broil them for under 10 minutes and get a delicious roast flavor and a touch of char to each sprout. Sprinkle liberally with sea salt and you have a delicious and healthy snack or you can dress them up!
Here are a few tips to Dress Up Your Brussel Sprouts:
1. For holidays and parties, I sometimes broil the brussel sprouts the evening before and then pop them in a pan with a touch of butter or oil to perk them up and warm them just before serving. Add bread crumbs or some finely grated Gruyere or Parmesan to the broiled brussel sprouts right before plating.
2. Dip them! The Hungry Goddess has a complete addiction to dipping Her brussel sprouts in Garlic Aioli – yogurt works well, balsamic vinegar, flavored oils – get creative!
3. Nuts and brussel sprouts go together like a healthy peanut butter and jelly – I love Mark Bittman’s recipe for Broiled Brussel Sprouts with Hazelnuts – walnuts, pecans, and almonds all work wonderfully too!
4. Lemon juice and lemon zest add a lovely fresh taste to brussel sprouts – after broiling, pop them in a pan with garlic and light oil. Add a squeeze of lemon juice and a pinch of lemon zest.

How to Broil Brussel Sprouts:
Set oven to broil.
Rinse approx 1 pound of brussel sprouts and cut ends, peeling 2 to 3 leafs off and any brown or bruised portions.
Cut brussel sprouts in half.
Toss brussel sprouts in approx 2 Tablespoons of Olive Oil.
Place on baking sheet and sprinkle sea salt over brussel sprouts.
Place on top shelf to broil.
Broil for approx 5 to 8 minutes (time varies with each oven) – if you like the char, broil a bit longer and if not, keep the time on the lower end.
